The restaurant first opened its doors in late 1990 under the name La Terraza del Casino. Located on the top floor of the iconic NH Collection Real Casino de Madrid, in the heart of the capital on Calle Alcalá, it has been helmed by Madrid-born chef Paco Roncero since the year 2000. The name change came at the end of 2019, as a natural evolution of the close relationship between the chef and culinary director, Paco Roncero, and the company Minor Hotels Europe & Americas. For over 30 years, this space has been Paco Roncero’s home—his refuge, his place for reflection and creation.
Paco Roncero Restaurante holds 2 MICHELIN Stars, 3 Repsol Suns, and is featured in the prestigious 50 Best Discovery guide by The World’s 50 Best Restaurants. Paco Roncero himself is also one of the most acclaimed figures in global gastronomy, recognized as one of just ninety-seven chefs worldwide to hold the distinction of three knives, according to the international The Best Chef Awards.
